I don't know if I was just really hungry, but these hit the spot! I used crispy white corn taco shells.

I found this recipe on another blog and tweaked it a bit to avoid another trip to the grocery store.
I think you could add shredded chicken and it would be a great main dish for those who believe you have to have meat in your main course.
