Mushroom Lasagne


Excellent recipe, mix and match your mushrooms.

Avocado Casserole


I found this recipe on another blog and tweaked it a bit to avoid another trip to the grocery store.
I think you could add shredded chicken and it would be a great main dish for those who believe you have to have meat in your main course.

More pizza!


We had St Louis Style Pizza 18 months ago and finally I found the perfect crust recipe. Cracker style, if you don't like thin and crispy, don't try this.
I placed pre cooked bacon on the pizza and it crisped right up. Made an excellent addition to my pizza toppings.

Chicken Pecan Quiche


You can feel free to use full fat-or light-items and if you do leave out the Hi Maize. I used it to thicken up the fat free cream cheese. I guess I should have said you can leave out the Hi Maize if you don't have any. It is a form of resistant starch and adds fiber so it can't hurt...

Crock Pot Main dishes.



Chicken Ole is a big hit. Even using lower fat ingredients it is great!
Big T is a great dish, you can make tacos the next day and they taste great!

I think everyone at my house was amazed that a ham sandwich was good with jam!

Here are a few of my recent meals. The pancake mix is versatile and I will post more recipes utilizing the mix. The taquitos were a huge hit. I tweaked the recipe from ourbestbites.com

Chili



I am thinking about campfire meals right now. I saw a recipe for corn pancakes to make over your campfire and serve with chili. I need to try this...
1/2 cup of beer
1 egg
1 cup corn muffin mix
Combine beer and egg. Stir in muffin mix until almost smooth. Bake on
hot, lightly greased griddle until golden. Place 2-3 pancakes on a plate and
top with chili.

Doesn't that sound good?

Brown Sugar Chicken Revisited


Okay, I tried the recipe the way it was written for the crock pot and I didn't really care for it. So this is the way I had the chicken and it was delicious.
I actually had frozen the ingredients in a ziplock and thawed during the day and then stuck it all in a pan to cook on the stove. Nothing scientific about the cooking method.

Chicken-Chinese Take Out style & Kettle Corn



The brown sugar chicken recipe is one to try for sure! I found this on A Year of Crockpotting. I stuck all of the ingredients in a ziplock bag and froze it. Pulled it out on Sunday and forgot the crockpot part. I heated the mixture to a boil on the stove top and then turned it to medium heat. Cooked the chicken through, then turned it to low and let it simmer. We thought we were at the local Chinese Buffet.
